Comfort Food Trend-Meatballs!

It’s not really fair to call meatballs a trend, because they’ve been around forever and are never going away. Affordable, easy and tasty, almost every culture in the world cooks some version of the meatball. The Meatball Cookbook Bible by Ellen Brown (641.66 B877.4m) gives this bite-sized comfort food the respect it deserves. Beef, pork, ham, lamb, chicken, turkey, fish, and even vegetarian recipes are included in this all-in-one source. Those who love the Middle Eastern restaurants around town might want to try these they next time they fire up the grill:

Grilled Middle Eastern Beef Meatballs

8 to 12 (8 inch) bamboo skewers

1 ¼ pounds ground chuck

4 cloves garlic, minced

1/4 cup grated red onion

1/4 cup chopped fresh parsley

1 tablespoon ground coriander

2 teaspoons ground cumin

1/2 teaspoon ground cinnamon

Salt and freshly ground pepper to taste

Soak the bamboo skewers in cold water to cover. Prepare a medium-hot charcoal or gas grill, or preheat the oven broiler.

Combine beef, garlic, onion, parsley, coriander, cumin, cinnamon, salt and pepper in a mixing bowl, and mix well.

Divide mixture into 8 to 12 portions, and form each portion into a sausage shape. Insert a skewer into each sausage so that the tip of the skewer is almost at the top of the meat.

Grill skewers for a total of 6 minutes, uncovered if using a grill, turning them gently with tongs to cook all sides. Serve immediately, accompanied by a bowl of Middle Eastern yogurt sauce or hummus.
