Staff Favorite-The Little Gumbo Book

All about roux, how to cook perfect rice, and 27 carefully selected recipes will take you step-by-step to a perfect gumbo. Staff member Charlotte P.  says the recipe for Cajun seasoning in The Little Gumbo Book (LA 641.813
M154L) book is great, and that her grandmother used it for years in lieu of store bought seasoned salt.

K’s Cajun Seasoning

1 (26 oz) box salt (or Lite Salt)

3 tablespoons black pepper

2 tablespoons garlic powder

1 teaspoon onion powder

2 tablespoons Accent (optional)

2 tablespoons dried parsley flakes

4 tablespoons red pepper (Cayenne)

2 tablespoons chili powder

Mix all in a large bowl or coffee can. Fill a shaker for daily use; store remainder in tightly covered container.

**Recipe notes say this will enhance all it touches and is not as peppery as commercially packaged seasonings.
